Ever heard the phrase “This food item is sooo delicious, oh but you can’t have any, it’s not gluten-free”? Well, I had heard it time and time again.

Hi, my name is Jasper, and I am the baker behind The Loafing Cat LLC gluten-free bakery. That sentence was something I heard repeatedly over the years, not to me but to my wife, who is gluten-free due to allergies. It didn’t take long before I had enough of my wife’s polite smile and sorries for her food restrictions, so I set out to bring to life all of her favorite baked goods.

I researched everything I could about gluten-free flours. What made this treat heavy and dense? Why was this thing so “sandy” and “grainy”? Help, my cookies are flat crisps! After many trials and errors, I made a flour blend that not only puffed up but was also light and smooth. Once I got the flour blend right, it was time - time to tackle the scariest project (I thought at the time): sourdough. Thus, Larry was born: my gluten-free sourdough starter. After a year of more trial and error and Larry maturing, I arrived at the amazing sourdough we offer today.

I found gluten-free baking to be one of the most challenging and rewarding hobbies. After many hours of discussion with my wife Katie, we decided to turn this passion into a business to offer anyone who has ever been told they cannot have amazing, delicious treats because they are gluten-free a little bit of happiness.
